Well, they had this on Mythbusters. I think what they do is pressurize a bottle with air, although there's still some water in there. Then basically they get the caps off the bottle quickly and away you go. I think the basic principle is similar to getting an end cap off a gas cylinder quickly. I'm sure someone here saw the actual mythbusters episode and probably actually knows what happened.
