here in mexico we have that prehispanic leyend.
Quetzalcoatl, the good and great god, was travelling around the world as as man. He had walked all day and by the afternoon he was very tired and hungry. He kept walking untill the stars began shinning and the moon was up in the sky. Then, Quetzacoatl sat and saw a little rabbit that was eating.

- What are you eating?- He asked.
- I'm eating zacate. Want some?.
-Thanks, but I don't eat zacate
- What will you do?
- Maybe die of thirst and hunger

the little rabbit got closer and said:
- I'm just a little rabbit, but if you are hungry, eat me, I'm here.

then, the god caressed the little rabbit and told him:
- you will not be just another rabbit, you will be the rabbit of the world, forever. They will remember you.
Quetzalcoatl rised the rabbit above his head, up to the moon and the rabbit's figure was stamped onto the moon's surface. Then the god said:
- there's your portrait, for all men and for all times.

actually not a joke, but according to wiki, it started with this:
John Heywood's Proverbes (1546) commented that "The moon is made of a greene cheese," "greene" meaning "not aged," but was probably being sarcastic

and a more explained reason:
" Here's an early green cheese citation from John Heywood's Proverbes (1546): "The moon is made of a greene cheese," greene meaning new, unaged. One can find similar quotes in the works of Francois Rabelais and Thomas More. I'm hearing sarcasm here, but in that era before one can't be sure. Other citations are clearer: "You may as soon persuade some Country Peasants, that the Moon is made of Green Cheese (as we say) as that 'tis bigger than his Cart-wheel" (Wilkins, New World 1, 1638), the implication being that Luna's non-cheesiosity was not a matter regarding which even the rustics were in doubt."
